Quick & Easy Keto Stew Meat Stir Fry

I will admit that I love having dinner options that are quick and easy because I often forget to plan ahead.  Stew Meat is one of those meats that I love having on hand because it makes fixing quick dishes easy. It comes in smaller 1lb packages, you can chop it, marinate it, stew it or fry it. And it can be stretched for several meals too! I wanted to share this outline for a recipe that I make sometimes when I’m down to “what’s in the fridge and how can I use it mode.” One evening I was out of time and not inspired to make stew, so I improvised, and this is what happened! 

 

To Make:

Partially thaw the stew meat in the microwave, yep I do that all the time too.  The little chunks slice easier when partially frozen, so don’t thaw it all the way. Then, slice it thinly. The thinner the slices the more tender this cut will be in this dish. Once sliced, fry/saute it in a hot cast iron skillet with a little olive or coconut oil.  When the meat is well browned, I personally like a bit of crust, then added the veggies.  You can use pretty much any veggie fresh or frozen; broccoli, green beans, peas, onions, mixed veggies etc.  While the veggies are cooking, add salt, pepper, soy sauce, possibly onion powder or onion, garlic powder or chopped garlic, lemon juice is good too for a fresh flavor.  Whatever you want to flavor the dish with.  I never make it complicated, but I never make it the same either.  I hardly ever follow a recipe.  I pretty much just cook with what is on hand and improvise the rest. It’s very liberating - ha! Cook the veggies until they are tender but not mushy, and all of the liquid (soy sauce etc.) is pretty well gone. Usually about 10-15 min or so.

 

The whole process can take less than 30 minutes and you have a warm stove top meal ready to go.  My husband prefers this dish served over rice or quinoa.  I usually just eat the dish by itself, so it qualifies as Keto for me.
