7 Steps to Heavenly Tender and Juicy Pot Roast

Ahh Roast!  They can either bring a family together or send them spiraling into family dinner dismay.  They are either one of the best meals you’ve ever eaten or that cut you dread trying to cook.   They bring to mind pictures of white picket fences, perfectly coifed hair, vacuumed houses and cozy warm kitchens.  Ok, maybe that’s going a bit far.  But really if you’ve ever had the privelidge of eating a good roast it’ll make your mouth water!  I am forever after that delicious, tender, moist and flavorful dish that makes you want to eat-the-whole-thing-right- now-and-how-dare-you-shred-it-and-put-it-in-a-burrito-or-some-other-lesser-meal-to-save-face kind of flavor.  Here’s how I got so lucky this past week.  

 The Process

  1. I started with a fully thawed roast.  (I seldom think this far ahead, but I think it helps in this process).  

  2. I gave it a good rub.  Try whatever spices and flavors you like.  Really rub it in there. 

  3. I seared it HOT in a cast iron skillet on all four sides.  I did not sear the ends – I’m not always a perfectionist.  Do it however it makes your little heart happy. 

  4. I used a good old fashioned crock pot.  

  5. I added chopped onions and green chilies to the pot below the roast.

  6. I added about 3-4 cups of beef broth from my favorite mix.  

  7. I brought it to a boil on high and then turned it down and let it slow cook for about 6 hours.  

 

We ate it -and it was glorious.
