How to Make the Most of Cheaper Cuts with Insta Pot Beef & Broccoli
I have long used our sliced stew meat or tenderized round steak for dishes like Beef and Broccoli, but when my mom got us an Insta Pot for Christmas this year - well, it took these recipes to a whole new level of yum! I wanted to share this one I have made because we enjoyed it so much.
The beauty of using an Insta Pot is that it doesn’t matter if you are using these cheaper cuts in your dish. They come out tender. Truth be told though, I have used recipes similar to this for several years with the same cuts of our Beef. If you slice your meat thin enough against the grain, you don’t need an insta pot and it’s still good. However, the Insta Pot makes it better since it’s pressure cooked in the sauce. Yes mom, you’re right - ha! There I said it.
This recipe is kid approved as my 1 year old enjoyed this as much as we did lol.

Insta Pot Beef and Broccoli
Ingredients
1-1 1/2lbs thinly sliced Everett Beef round steak, stew meat or roast
1 Tbsp oil
4 tsp minced garlic
¾ C beef broth, veggie broth or water
½ C Soy Sauce
1/3 C Brown Sugar, honey or Swerve Brown Sugar
2 Tbsp Sesame Oil (if you have it, Olive Oil if not)
1 lb Broccoli cut into florets or roughly chopped (I used frozen chopped broccoli)
3 Tbsp water
2 Tbsp Cornstarch
Instructions
1. Put the oil in the Insta Pot and select “sauté.”
2. When the oil is ready, brown the meat.
3. Stir in the beef broth, garlic, soy sauce, brown sugar, sesame oil. Stir until the sugar is dissolved.
4. Lock the lid in place. Cook at high pressure for 10 minutes. Make sure the valve is set to the sealed position.
5. When cooking time ends, do a quick pressure release.
6. Mix corn starch and water together.
7. When pressure is released, remove the lid and add the cornstarch and water mixture and stir until smooth.
8. Select “sauté” and add the broccoli and stir until heated through. If broccoli was frozen, you could thaw it a bit in the microwave or cook a bit longer in the insta pot at this stage.
9. When everything is warm it is ready to serve.
Serve With:
Rice, Mashed Potatoes, zucchini noodles or by itself!
